Whole30 Herby White Sauce Chicken Drums with Porter Road & Sir Kensington's

I have been a devotee of Sir Kensington’s since I first tried their ketchup at STK Kitchen in Atlanta in 2012. Since then they have expanded their product line to include mayos, sauces, mustards, and they have become one of the best condiment companies on the market. I am so happy to partner with them and even more excited that Porter Road is in the mix! I love meat, I am around primal cuts and butchering all day long #thesteaklife. When I received my first shipment of Porter Road meats, I knew these products were going to be addicting. From the packaging, to the fresh appearance of the meat, I favor Porter Road over the grocery store.

I have a special recipe for you, inspired by Alabama White Sauce, my Whole30 love of bitter and bright flavors combined, and my need for easy meals… I have created a bitter lemon and parsley filled ‘Bama sauce with with Sir Kensington’s Avocado Oil Mayo and Porter Road chicken drums. I used Williams-Sonoma dried lemon rind, you may remember it from my Madras Curry & Coconut Braised Cauliflower, this stuff is bitter and bright creating wonderful flavor when combined with red wine vinegar, loads of parsley, spices, and mayo!


Herby White Sauce

  • 1/2 c. Sir Kensington’s Avocado Oil Mayo

  • 1 tsp. dried lemon rind, pulverized (powderized?!) in a coffee grinder, food processor, or mortar and pestle

  • 2 tsp. red wine vinegar or apple cider vinegar (or a mix) ACV is sweeter RWV has more tang

  • 4-7 tbsp. water for desired thinness

  • 2 tbsp. finely chopped parsley

  • 1 tsp. Maldon salt

  • 2 tsp. fresh cracked pepper

  • 1/4 tsp. onion powder

  • 1/4 tsp. garlic powder

  • 1/4 tsp. cayenne or paprika if you want less spice

I just simply whisked these ingredients in a bowl after pulverizing the lemon rind. I used a small Krups coffee grinder that I only use for spices. Taste the sauce as you go so you can find your perfect spice combo! My husband loved this sauce on Porter Road pork tenderloin earlier in the week. It really is a star on anything!

If you aren’t doing a Whole30 I would recommend adding a tbsp. of honey to this sauce, I know it would knock it out of the park!


Herby White Sauce Chicken Drums

  • 3 packages of Porter Road chicken drums (12 drums)

  • 1 c. of Herby White sauce (but double if you want more for dipping)

Preheat your oven to 375 degrees. Porter Road drums are large so they took longer to cook than I initially thought. Line a baking sheet with parchment paper, arrange the drums and brush each with 1 tbsp. of sauce. Sprinkle with a little extra salt and place in the oven for 35 minutes. After 15 minutes, baste with a brush and turn the drums. For the last 5 minutes turn your oven up to 425 degrees to ensure pretty browning.
