Tex-Mex Layered Taco Dip
This dip was a revelation! I’m always brainstorming how to make ultra delicious, crowd-pleasing meals, that fit within my idea of “easy”. This dish requires a blender, one pan, a bowl to dress the slaw, and a dish to arrange everything in. Otherwise, it’s fairly simple! The Creamy Avocado Cilantro Slaw could top anything or be eaten on it’s own, and the green chile beef could be used in a variety of dishes including regular taco night.
Creamy Avocado Cilantro Sauce
1 c. cilantro leaves
1 c. mayo (homemade for Whole30)
1 avocado
1 small lime, squeezed
1 jalapeno, deseeded
1/2 tsp. sea salt
1 tsp. agave syrup (omit for Whole30)
In a blender blend the ingredients above until smooth, I kept it a little thicker so it would adhere to the coleslaw. Here are my ingredients and technique for that:
1 pack Trader Joe’s coleslaw mix
1/2 red onion sliced thin
In a bowl combine the coleslaw and red onion. I then took kitchen scissors and broke everything up into smaller, bite-sized pieces. Then I mixed with the creamy avocado cilantro dressing and set aside. This slaw would be amazing on almost anything, and also by itself.
Green Chile Beef
1 lb. ground beef
1 small can green chiles
2 cloves garlic
1 tbsp. tomato paste
1 tbsp. chili powder
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. cumin
1 tsp. smoked paprika
pinch of sea salt and pepper to taste
This green chile beef is AMAZING! Heat a little olive oil in a cast iron pan and sautee the green chiles and garlic together. Add the ground beef and start to brown. When the beef is browned, add all the dry ingredients and a teaspoon of water and let it come together for a second. I actually added Vital Proteins Beef Bone Broth Collagen powder at this time for an extra beefy flavor, the collagen thickens the roux of the taco meat a bit, and I love adding collagen to foods for those extra nutrients!

Green Chile Beef
Trader Joe’s Cuban Black Beans (omit for Whole30) and I just heated in the taco meat pan for 5 minutes. Any bean would be great for this, but my husband loves Cuban black beans and they come seasoned perfectly!
Creamy Avocado Cilantro Slaw
Lots of green onions!
Get creative and add whatever else you want! Shredded Mexican-style cheese, corn, sliced jalapeños, radishes, anything would be great; though, it’s pretty perfect the way it is.
Eat with tortilla chips or spoon into lettuce cups!
